New Dining Venue In Miami

Here's how they describe themselves:


The idea for Sustain started very humbly and on a small-scale. Beliefs about and practices related to sustainability took root in the farmer markets where we shopped and the kitchens of our homes where we prepared daily meals. The simple recycling of a plastic bottle. The composting of organic table scraps and garden-grown vestiges. The rehabbing of a salvaged table large enough to seat many friends and family. And from the realm of the personal, we extend out these valuable lessons learned in order to supply food, drink, and other necessities of life at the large-scale. Sustain sustains…through food, architectural design, and daily operations, and always with an eye to the preservation of environments, natural resources, and communities.

Sustain features modern American fare―classic comfort food that is creatively re-imagined. The menu changes seasonally and includes daily specials. Yet, there is an overarching commitment to sourcing ingredients that are local and organic. To this end, we cultivate relationships with sustainable and artisanal producers, those who operate outside the industrial food grid. Regionally raised grass-fed beef, for instance, is used in house-made hamburgers, sausages, and corned beef, and the Monterey Bay Fish Guide determines the availability of seafood items. One dish that Sustain is particularly excited to offer is its porchetta, a traditional Tuscan dish of roasted and herb enhanced pork, from pasture-raised Berkshire pigs. And for the more vegetable-minded, we have a “50-mile” salad, made with ingredients from within fifty miles of Midtown. To complement the menu, the bar offers old-fashioned cocktails, craft beers, and a large selection of reasonably priced wines. Rather than bottled water, Sustain serves filtered water from an in-house system, free of charge.

In its design, Sustain has employed the craftsmanship of local artisans who have utilized recycled and reclaimed materials. Suspended from the ceiling are sculpture pods woven from recycled aluminum, while a sustainable “rib-cage” mangrove installation runs the length of one wall. Tables, seating, and other mill work have been manufactured from reclaimed woods like regular and pecky cypress. Other eco-minded aspects of Sustain include VOC-free paints, LED lighting, and green-guard certified fabrics that are compliant with the U.S. Green Building Council/ LEED (Leadership in Energy & Environmental Design).
